The city has far surpassed not only Japanese but also French cities. According to the guide, Tokyo boasts 230 Michelin-starred restaurants, while Paris has only 113. Of these, 13 Tokyo establishments currently hold the highest rating—three stars, 52 have two stars, and 165 have one star. Among the best are Kagurazaka Ishikawa, featuring Japanese cuisine; Quintessence, featuring French cuisine; Sushi Saito, serving sushi; and Usukifugu Yamadaya, specializing in fugu dishes.
France leads the world in the number of Michelin Guide citations. In 2019, more than 600 French restaurants will be awarded stars. Italy follows close behind. Residents and visitors can enjoy exquisite cuisine at 10 three-star establishments, including La Pergola in Rome, Riccardo Monco in Florence, Chicco Cerea in Bergamo, and Osteria Francescana in Modena. A total of 367 Italian restaurants are included in the Michelin Guide.
Star recipients in Spain and Portugal have also been announced. The combined guide for the two countries lists 30 restaurants.
